Italian cucumber salad

Fresh Taste of Italy. Suitable as a side dish to a main course or on its own.
1. Wash and dry all the ingredients. 2. Finely grate the cucumber, quarter the tomatoes, finely chop the black olives and finely chop the red onion. Mix everything together. 3. Season the salad with salt, black pepper, brown sugar, balsamic vinegar and a splash of lemon juice (you can drizzle a little olive oil if you like). Toss again. 4. Leave to rest to allow the flavours to combine. Preferably in the fridge. 5. Serve. Excellent with fish.
