Island-style Gravisiika

Siika is a great gravel fish. Its delicacy meets its delicious honey-mustard sauce in this recipe.
Ingredients for four
400g whitefish fillets 1 tbsp sugar 1/2 tsp white pepper 2 tbsp coarse sea salt 1 handful of dill
Honey-mustard sauce
1 tablespoon liquid honey 1 tablespoon mustard 1 tablespoon olive oil
Place the whitefish fillet skin in a shallow dish covered with cling film and season with a little salt.
Sprinkle the sugar, pepper and salt over the bottom, along with the dill. Wrap tightly in cling film and place in the fridge to rest for a few hours, ready for the next batch.
Stir the sauce and leave to infuse.
Remove the whitefish from the cupboard and rinse with cold water. Wrap it in cling film again and put it in the freezer for 15 minutes to allow it to soften. Once tender, it’s easy to slice it into oblique slices for serving. Enjoy with mustard-honey sauce and island bread.
