4 servings 2 egg whites 500 g strawberries 100 g of sugar semolina
1 Place a metal bowl in the freezer to chill. Mix two thirds of the sugar with 200 ml of water and bring to the boil. Boil for about 5 minutes until a sugar solution forms. 2 Cut the washed strawberries into chunks. Place them in a blender and blend with the sugar solution until pureed. Strain through a fine sieve to remove the strawberry grains.

3 Whisk the egg whites with the remaining sugar until stiff and gently fold them into the strawberry puree.
