It is one of the most consumed tropical fruits in Spain, not only canned, but also natural. Its sweet taste and firm texture make it a delicious natural treat.
It is a fruit with high water content so it is very suitable for the preparation of juices, sorbets and smoothies like this pineapple and mint granita that we bring you today.
Nutritional properties of pineapple
According to the Spanish Nutrition Foundation “pineapple is a fruit that only ripens satisfactorily on the plant. Its sugar content and active ingredients double in the last weeks of ripening, so the fruits harvested prematurely are acidic and poor in nutrients.
If it has been well matured contains about 11% of carbohydrates. Pineapple is a source of vitamin C (contributes to the protection of cells against oxidative damage) and iodine (contributes to normal energy metabolism and the production of thyroid hormones and normal thyroid function).
Among the non-nutritive components of pineapple, the organic acids, citric and malic, responsible for its sour taste, stand out.
It contains bromelain or bromelain, an enzyme or ferment with proteolytic action, capable of breaking protein molecules leaving free the amino acids that form them.
A fairly common way of consuming pineapple is canned. After this processing, the pineapple keeps some of its vitamins and minerals, but it is poor in its enzyme bromelain —which degrades easily — and it is also more caloric when the canned is not in its juice, but in syrup, a sugary solution.”

Peel the pineapple, cut it into cubes of about three centimeters and throw them in the glass of a food processor or an American glass blender with enough power to crush ice.
Step 2
Peel the limes, cut them in two and add them to the glass.
Step 3
Add the mint and puree.
Step 4
Add the ice and crush everything with a few strokes of turbo. If we do not have any appliance with enough power to crush ice, we can replace the ice cubes with crushed ice flakes that you can buy in many supermarkets. In this case, add the ice flakes to the pineapple puree and mix well with the help of a spatula.
Step 5
Serve immediately, garnishing with some mint leaves or a little lime zest.
