Hummus is a perfect option for an easy and relaxed snack, this version of beans with the touch of caramelized mushrooms and dried apricots goes one step further.

In Spain we know them as habas, alubias or beans and they are a good alternative to chickpeas to prepare hummus recipes like this one. It is quick, easy to make, ideal to leave prepared in advance and also perfect to use the leftovers of any bean stew… this bean hummus opens the door to an infinite number of possibilities around this recipe so popular in the Middle East. The base, made from cooked white beans is perfect as a dip, as a spread or even as an accompaniment to many dishes and hummus can be used as a dip with tortilla chips or vegetable crudités, as a sandwich spread or even as a vinaigrette for salads.
The traditional hummus, the chickpea hummus, is prepared in the same way as this bean hummus but the truth is that the result with the bean is silkier and smoother, for me much more pleasant. It can be left as it is, the hummus, or if we want to turn it into a substantial first course, we can add these caramelized mushrooms with a touch of soy and vinegar and the final touch of the dried apricots. On the side, some crusty breads, and the fun is served.

Step 1
Peel the garlic and remove the germ, in a bowl the beans with the garlic clove, the tahini and a tablespoon of olive oil. Add a little water if we would like to make it softer. Add the spices and mix well, finally add the lemon and salt.

At the last moment add the rest of the olive oil and blend. Ideally do this with a food processor or blender.

Preserve filmed on contact so that it does not dry out on top or form a crust.

Cut the mushrooms into sixths.

Saute over medium heat in a frying pan with the olive oil, salt and spices. Until they start to take color on the outside.

Cut the apricot kernels into small pieces.

Place the hummus with a little olive oil on top, the mushrooms and finally the dried apricots. Optionally we can incorporate a little chopped chives or parsley, to the taste of each one, the ideal is to serve this hummus accompanied by some crusty bread as a toast to go spreading it or else a little tender pita bread to do the same.
