Homemade muffins

Baked dough of plain flour and other ingredients shaped into muffins fried in hot oil until golden brown, filled with spicy jam and covered with whipped yoghurt.

Procedure:
1. First, prepare the yeast starter; from sugar, a teaspoon of flour and 2 tablespoons of lukewarm milk, let it rise
2. Sift the flour into a bowl, add the salt, the risen leaven, the sugar, the lukewarm milk with the beaten egg yolks, the lukewarm fat, the grated lemon peel and knead the elastic dough, let it rise
3. Use a spoon to cut out individual loaves from the dough, roll them on a floured rolling pin and let them rise for 30 minutes, preferably under a clean cloth
4. Before frying, make a dent in each loaf and then place them in a large amount of hot oil, dent side down, turn them over during frying and fry until golden brown
5. Take them out, let them drain thoroughly on a paper towel, then fill them with the spicy jam and top them with a spoonful of whipped yogurt each time.
