Homemade Kinder milk cut

ingredients
3 pcs eggs 120 g granulated sugar 125 ml whipping cream (33%) 125 g semi-coarse flour 40 g cocoa 5 g baking powder
Filling
500 g Mascarpone 3 tbsp honey 1 tsp lemon zest 200 ml whipping cream (33%, chilled) 100 g granulated sugar

Beat the eggs with the sugar by adding the whipping cream about halfway through and whisking to combine

In another bowl, whisk together the flour, cocoa powder and baking powder. This is then stirred into the prepared egg and cream mixture. Stir by hand with a pastry blender. Place baking paper on a baking tray and spread the prepared cocoa mixture evenly. Bake for 15 minutes at 180°C. Preheat the oven, of course.

Cut the crust into two equal halves. While it is cooling prepare the filling.

Whip the mascarpone with the honey and lemon zest (grated finely) with an electric beater. In a separate bowl, prepare the whipping cream with the sugar and then fold it into the mascarpone with a spatula.

Spread the filling evenly over one slice and cover with the other. Let rest for two hours in the refrigerator and serve.
