Homemade grandma’s thick yoghurt

1 liter milk 1 pk white yoghurt

Bring the milk to the boil, so that it doesn’t boil, just to make foam on the surface – to a temperature of about 80°C. Stir, but not with a wooden spoon ! Refrigerate, stirring occasionally to prevent a skin forming on the surface. Take a little of the warm but not hot milk into a bowl and mix with the white yoghurt ( use the white yoghurt you like ). Stir well and pour in with the rest of the milk.

Stir again and fill into a large glass jar and seal. Place in the oven, which you have heated to 50 °C. Once inserted, immediately turn off the heat. After an hour or so, turn the oven back on to 50°C and turn it off again. (Leave the yoghurt in the oven for about 5-8 hours (do not open the oven during this time until the necessary heat has escaped. At this stage you have finished a classic homemade yogurt, so medium thick. Tip : You can also make fruit yogurts right away by putting your favorite jam in the bottom of the jars and pour the yogurt mixture over the yogurt, and so the ovens. If you like coffee yogurts, add nesca-coffee or vanilla sugar to the milk already to taste.

Those who like extra thick, creamy yogurts will do one more little trick 🙂 From the whole amount of yoghurt prepared in this way, take 2/3 and put 1/3 in the fridge. Prepare a bowl in which you put a sieve and gauze. Pour 2/3 of the yoghurt and set aside in the fridge to drain the excess liquid. ( I left this overnight )

In the morning we will be left with extra thick yoghurt in the cheesecloth sieve until the yoghurt spread, if you add salt and chives you can have a healthy breakfast 🙂 Transfer this thick yoghurt from the cheesecloth to a bowl add ( dilute ) 1/3 of the yoghurt that we have refrigerated and you can season and fill small resealable jars in which to refrigerate it. I mixed in vanilla sugar and made with homemade strawberry jam for my husband:-)
