This recipe for gingerbread has been baking at home for a very long time. I got the recipe from my mom and my kids bake it too. It is my son’s favorite cake and he can bake it himself. When his holiday is coming up, he calls his grandmother and tells her not to bake him a cake but rather his gingerbread cake.

Beat the eggs and sugar until frothy, add the jam, cocoa, oil, milk and finally the flour and powder.

Pour the cake onto a baking tray and bake.

Smear the hot cake with jam and either sprinkle with coconut or drizzle with chocolate.

I like it best with coconut.
