One tends to think that the recipes our grandmothers made were all very complicated and, in most cases, nothing could be further from the truth. Many of the great grandmother’s recipes have gone down in history precisely because they are very simple to make and they are also delicious.
Ingredients
Whole milk, 500 ml Eggs, 3 Sugar, 5 or 6 tablespoons Cornstarch, 2 tablespoons Cinnamon, vanilla, orange peel… for flavoring (optional) Cinnamon powder, cookies,… to serve (optional)
Step 1
In a bowl put about 50 ml of milk and the rest of the milk put it to heat in a saucepan over low heat. We can heat the milk alone or aromatize it with whatever we like, a cinnamon stick, a vanilla pod opened in half, an orange, lime or lemon peel, cardamom pods, a piece of ginger, a few stars of anise….
Step 2
In the 50 ml of reserved milk, dissolve the cornstarch, add the eggs and sugar and beat well.
Step 3
When the milk we are heating is about to boil, remove from the heat, wait a minute, remove the cinnamon stick or whatever we have used for flavoring and pour it little by little over the egg mixture while beating everything with a hand whisk. We must incorporate the hot milk very slowly so that the egg does not curdle suddenly and instead of custard we have an omelet.
Step 4
We put the mixture back into the saucepan and put it over low heat stirring nonstop with the rods until we see that it begins to thicken. Continue stirring until you have the texture you like, but keep in mind that when it cools it will thicken a little more.
Step 5
Spread in bowls or cups, put a cookie if you like, cover and let cool. They can be served as is or with a little liquid caramel on top or sprinkled with cinnamon.
Note
If we want to flavor our custard with some essence -vanilla, lemon, …- we will add it along with the sugar to the egg mixture. In this case, we would not have to infuse the milk as we explained in step one, but we would simply heat the milk alone.
