To start, you’ll need:
1 whole chicken, giblets removed
1 onion, chopped
3 carrots, chopped
3 celery stalks, chopped
1 head of garlic, cloves peeled and minced
1 tablespoon olive oil
1 tablespoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup white wine
6-8 cups chicken stock
Preheat oven to 350 degrees F. In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic, and cook until softened, stirring occasionally. Add the chicken, thyme, salt, and pepper, and cook for a few minutes more until the chicken is lightly browned. Pour in the white wine and chicken stock.
Bring the mixture to a simmer then cover with a lid and transfer to the oven. Bake for 1- 1 1/2 hours, or until the chicken is cooked through. Remove from oven and let rest for 10 minutes before carving.
