Healthy cake with strawberry jam

2 cups fresh strawberries 1 pk apple 2 tbsp water lemon juice, maple syrup to sweeten

Healthy oatmeal cake recipe with nuts, fruit and freshly cooked strawberry jam.

Strawberry jam: Wash and cut strawberries into halves. Grate the apple and peel it. Place the fruit in a saucepan with 2 tbsp of water and cook over a low heat until the fruit has cooked down to a thick purée and the liquid has evaporated. Cook for about 10-15 minutes. Can be sweetened with maple syrup. Finally, add the lemon juice, bring to a boil, simmer for 2-3 minutes and set aside. Let cool and refrigerate. The jam can also be made the day before.

Cesto. Grind or blend one cup into flour, leave the other whole.

Clean the bananas, cut into rounds and mash with a fork. Peel the apples, grate and drizzle with lemon juice. Chop or grind the nuts.

In a bowl, mix the dry ingredients (nuts, oat flour and flakes, a pinch of salt and cinnamon). Add the eggs, nut butter, vanilla marrow, and fruit and mix together lightly with a whisk. Set aside about 1/3 of the batter.

Line the baking sheet with parchment paper and grease the sides. Transfer most of the dough to the baking sheet and spread with a spatula. Spread the cooled jam evenly over the top, spread the other part of the pastry and sprinkle with the sliced almonds.

Bake at 180°C for about 30 minutes or according to your oven.

Let the cooked cake cool on a wire rack. Then slice and can be eaten. Enjoy.
