1. Cut the cleaned and washed pike into portions, place in boiling salted water, add whole black pepper, onion cut into rings and cook until semi-soft. 2. Prepare a pale roux from butter and flour, pour in the fish stock, whisk well, season with salt and vinegar and cook for at least 30 min. 3. Shortly before boiling, add the grated horseradish and the fish portions, which are cooked in the sauce until tender. 4. Serve with boiled potatoes sprinkled with chopped green parsley and a wedge of lemon.
