Grind the cumin and coriander – ideally in a mortar and drop them into a hot pan with olive oil. Add the diced halloumi cheese and fry until golden brown, over a high heat, stirring constantly, for about 5 minutes.

Stir in a spoonful of curry paste and pour the coconut milk over everything. Clean and grate the garlic and ginger. Add them to the pan, turn down the stove heat to medium and cook, stirring occasionally, for about 15 minutes, or until the sauce reduces to a thick consistency.

Finish by stirring the peanut butter and lime juice into the sauce. Season with soy sauce. Serve in torn romaine lettuce leaves, garnished with fresh coriander leaves. Instagram: walrus.buko
