Hairy with mushrooms

This recipe dates back to the last century. This is how it is prepared in East Bohemia. It is actually classic hairy dumplings, served mixed with wild mushroom fry. Although the dish does not look very appealing, anyone who likes mushrooms will certainly enjoy it.

Ingredients:

For the hairy dumplings: 400 g potatoes cooked in their skins 400 g 200 g of coarse flour 3 tbsp starch 1 pk whole egg 1 pk 1 pk day old bun water salt 400-500 g fresh mushrooms 5-6 pcs eggs 2 pcs onions 2 pcs onions 3 tbsp butter 2 tbsp cumin water for pouring salt

Procedure:

Preparing the Fluffy Dumplings:

Graze raw potatoes, partially squeeze out the water, add grated boiled potatoes, eggs, salt, flour, starch, mix and form smaller round dumplings

Cook the prepared dumplings in salted boiling water for about 10 minutes, depending on their size.

Preparing the fry:

peel the onion and finely chop it, clean the mushrooms, rinse them, let them drain thoroughly, then slice them

Let the onions brown in the melted butter, add the mushrooms, stir them, season with cumin, salt and, if necessary, pour a little water over them

Simmer the mushrooms until soft

Whisk the eggs with salt and before the end of the simmering, mix them into the sautéed mushrooms, stir the mixture until the eggs thicken.

Serving:

It’s simple, mix the dumplings in a larger bowl with the fry, serve hot.
