1 kg pork ribs
Marinade
1 tsp crushed cumin 1 tsp dried garlic 2 tsp red sweet paprika ground classic/smoked in a ratio of 1:1 1 tsp oregano dried crushed black pepper freshly ground, chili pepper

Dill dressing
white yoghurt, crushed garlic, ground black pepper, fresh dill, salt

Grilled delicacy that will delight our taste buds.

Mix the ingredients for the marinade to make a dry meat marinating mixture.

Wash the ribs, blanch, pat dry and cut into smaller pieces along the bones. Massage the marinating mixture thoroughly into each one. Arrange in a container, cover with cling film and refrigerate for at least 6-8 hours, preferably overnight.

Fold out the foil, season the marinated ribs with salt and stack them side by side. Wrap well, transfer to a baking tray and bake slowly in a preheated oven at 150 °C for about 2 hours.

While the ribs are baking, prepare the sweet and sour BBQ sauce. Fry the chopped onion in the oil, add the garlic and fry briefly together. Stir in the tomato puree, Worcestershire sauce, apple cider vinegar, sweeten, season and salt to taste. Cook for about 10 minutes, blend when cool.

Dressing is prepared by mixing yoghurt with crushed garlic, pepper, a pinch of salt and chopped fresh dill.

Remove the ribs from the foil, brush both sides with the stock and BBQ sauce and place on a well heated grill. Grill for approximately 8-10 minutes on each side. You can also use a grill pan instead of an outdoor grill or turn on the “grill” function on the oven.
