Serving size: n/a 270 g of sugar salt 3 pcs. Eggs 350 g of plain flour 100 g raisins 50 g semolina 2 kg pumpkin 1 tbsp ground cinnamon 1 tbsp baking powder 100 ml soya oil 1 egg yolk for coating walnuts for decoration
Recipe preparation steps
1 Mix the flour with the baking powder and sift it in a bowl. Add the egg yolks, soya oil, cinnamon, 120 g of sugar and knead everything into a smooth dough and leave it in the fridge for half an hour. Cut the flesh into small pieces. Add about 250 ml of water to a saucepan, bring to the boil and add the sliced pumpkin, which will cook for about 10 minutes until soft. Drain off the remaining liquid and leave the pumpkin to cool. 3 Preheat the oven to 200 °C. Roll out two thirds of the dough on a lightly floured surface so that it is slightly larger than the baking tray. Grease the baking tray with soya oil and place the rolled out dough on it. For even baking, you can weight the dough with legumes arranged on the baking paper. Bake the baking tray in the preheated oven for about 15 minutes. 4 Meanwhile, chop the walnuts and mix them with the sugar, semolina, raisins, eggs, a pinch of salt and the cold pumpkin. 5 Remove the paper with the pods from the overbaked cake and brush it with the pumpkin mixture. Roll out the last third of the dough and cut into strips. Arrange the slices on the cake like a grid.
