Grenadier March

Grenadiren marsch (Grenadier March) is an old military recipe from the Napoleonic Wars. Its origin is attributed to Hungarian grenadiers who served in the Austro-Hungarian army. It is actually a cheap meal made from ingredients that were plentiful in the army at the time, i.e. potatoes, speck and bacon. The Hungarians then enhanced all the dishes with paprika for flavour and aroma.

Procedure:
1. Boil the potatoes in their skins until soft, cook the spots in salted water
2. Peel the potatoes, cut them into rounds, skim off the spots, rinse with water
3. Fry the chopped onions in lard together with the chopped bacon, dust with red pepper towards the end
4. Mix the potatoes with the bacon, onions and spots, season with salt, cumin and pepper
5. Place the mixture in a baking dish and bake in an oven preheated to 200 °C, bake until a crust forms on top.
Recommendation:
Serve with pickles or vegetable salad, can also be improved with ox eye.
