Pies are probably the most popular savoury pastry in households. There are really an awful lot of recipes for it, yet there are never enough of them These blue mould cheese scones are just amazingly tasty and disappear from the tin while still warm
1.
Mix the two flours, salt, sugar and PDP first with a spoon. Then add the oil, egg yolks, yoghurt and yeast soaked in milk. Make a fairly soft and still quite sticky dough. Dust with flour and knead briefly into a loaf. Let the dough rise for 1/2 hour.
2.
For the filling, mash the mould cheese and mix it with the melted butter. You can add more salt to the filling if you like, it’s up to you
3.
After the time is up, use the starch to roll the dough into a large circle and spread the filling over it. Finally, fold the dough classically as for pagachiki, with the only exception that a little bit of filling is spread on the dough in between folding it as well For a better idea of the progress, you can also watch the video. Finally, leave the folded dough covered for 30 minutes to rise. Fold the dough only ONCE , not 3 times
4.
After the time is up, roll out the dough to a thickness of 1.5 fingers and cut out any size pagáče. I cut out with a glass because I wanted bigger pagáče You can dip the cutter in a little oil while cutting out, it will cut out easier and nicer. Place the pagáče on a baking sheet with paper and let them rise for 25 minutes.
5.
Brush the risen pagáče with egg white and sprinkle with seeds. Bake in a preheated oven at 190°C for about 20 minutes. It is necessary to keep track of it.
6.
The pagáče are amazingly tasty and fragrant Quite light and slightly crispy on the outside. The layers of dough separate nicely even though it has only been folded once. Feel free to try these scones if you like mould cheese! They are very popular in our house Enjoy!
