1/2 kg plain flour 20 dkg butter 20 dkg powdered sugar 3 pcs eggs 1/2 tsp bicarbonate of soda 3 tbsp honey 1 packet gingerbread powder Dr. Oetker 20 gr. 1 tsp cinnamon lemon zest

This is a recipe from my pastry chef friend who succumbed to als sclerosis. I remind myself of her every time I bake these gingerbread cookies, which can be eaten immediately and even after Christmas if they increase…

On a board, work the dough, roll it out to about 3 mm thickness, cut out with moulds, brush with beaten egg, grease and bake at 180°C.

Filling: Beat 1 egg white with 15 dkg 2 times sifted icing sugar, a few drops of lemon juice and decorate the gingerbread with this.

I haven’t decorated them yet, but they are delicious like this.
