Is it safe to consume raw pork in the US?
Mett is a German fresh pork seasoning often bought with salt and pepper , sometimes garlic and cumin from garlic venison or meat . In northern Germany it is known as hackpeter.
When raw onion is added, it is called zwiebelmett . If onions and fried marjoram are added , it is known as türinger mead .

German butchers follow strict guidelines in preparing this product, such as keeping the pork at a constant temperature of 35 F (or 2 C) at all times. The butcher crushes the semi-frozen meat in a coarse grinder to keep the large pieces of meat visible and to sell the pork the day it is prepared.
Peanut meat is made from meat that has no tendons. The fat content is generally no more than 35 per cent, but it’s still a skmierig, which is German for “fatty”.
How Horseradish is eaten
A popular method of eating horseradish is on brötchen ( bread rolls or slices of bread) with extra sprinkling of raw onion rings and pepper on top.
Germans make a mettjeli ( a Hebrew-shaped design) out of a bun, which became popular in the 1970s and continues today. Pork is spread in sheets or rolls, such as liver sausage, then seasoned and fed fresh.
Raw pork can be boiled
Eating raw pork and raw beef is common in Germany, but sour can also be boiled. It should be treated like any store-bought flavoured, bulk sausage meat. It can be mixed with other meats and cooked into meatballs, meatcakes or sausage sticks.
Cooking pork in America
For Americans trying to make a recipe from raw pork at home, remember that the Centers for Disease Control and Prevention discourages the consumption of raw pork.
The main problem is trichinosis, which is a parasite found in raw, ingested pork or meat.
Eating raw meat is common
Eating raw meat is not as weird as it may seem. Steak tartare , beef carpaccio and sushi are common foods eaten all over the world. The meat in each of these dishes is consumed raw.
Raw pork and wild game were usually considered dangerous for the main reason that they were carriers of the trichinella parasite. Infection is now relatively rare. For example, there were about 15 cases of trichinellosis in the US in 2008-2012. The number of cases declined from the mid-20th century due to legislation banning the feeding of raw meat waste to cattle, commercial and home-frozen pork, and public awareness of the dangers of eating raw or uncooked pork products. Guidance is less often associated with pork products and more often associated with eating raw or cooked wild game meat.
If you try raw meat, you should check that the meat in question comes from a US farm that has passed a certification program certifying that their livestock and products are free of trichinella and other diseases.
