400 g coarse flour 20 g fresh yeast 50 g sugar 250 ml milk 20 g butter 2 pk egg yolk 1 pk egg 1 tsp rum 40 g raisins 1 pinch salt 1 little lemon zest

Fantastic mini doughnuts – yummy!

Raw ingredients.

Grind the yeast into the lukewarm milk with the sugar and allow the yeast to rise. Sift the flour, add salt, lemon zest, egg, egg yolks, melted butter, rum and the risen leaven.

Make a semi-stiff dough, mix in the steamed raisins, cover and leave to rise in a warm place for about half an hour.

So rise.

With your hands, remove the dough and shape into balls, I got 37 pieces.

Place the doughnuts in more hot oil and cover. After a minute, flip them over and finish frying from the other side, uncovered.
7.
After removing the doughnuts, drain them on a paper towel and roll them in vanilla sugar while still warm.
8.
Finished, sample in the cut.
