Fried Cheese with Fries

Fried cheese or “Smažák” is a dish given to the world by the Czechs. It is traditionally served with fries or otherwise prepared potatoes, or it can be served in a bun as a burger.

Procedure:
Preparation of fried cheese:
1. Whisk the eggs with milk, lightly salt
2. Coat the cheese slices successively in plain flour, eggs and sifted breadcrumbs
3. Then fry the coated cheese in hot fat until light golden in colour.
Preparation of fries:
1. Cut the peeled potatoes into equal sized fries, cover them with cold water and let them stand for 30 minutes to wash off the excess starch
2. Drain the fries and dry them in a clean cloth so that the oil does not splash when frying
3. Place the prepared potato fries in the heated oil and, shaking the container (frying basket) from time to time, stir-fry slowly until almost tender
4. Remove the pre-fried fries, drain thoroughly and keep them covered and warm 5. Just before serving, fry the fries in the hot fat until golden brown
6. Remove them, drain, or spread them on paper towels to get rid of excess fat

Recommendation:
You can of course buy the fries already pre-fried and just fry them until golden brown. As a side dish, in addition to fries or otherwise prepared potatoes, serve tartar sauce.
