French savoury brioche

Salty pastry made of flour, butter, yeast and milk.

Procedure:
1. Sift the semi-coarse flour into a bowl, make a well in which to crumble the yeast, add a teaspoon of sanding sugar, pour in some of the lukewarm milk, cover lightly with flour and leave in a warm place to rise
2. Work the dough thoroughly and leave it to rise again in a warm place
4. Put the dough on a floured rolling pin, divide it into about 25 pieces, round them and transfer them to a lightly greased baking sheet (you can cut the brioche several times with scissors)
5. Brush with beaten egg yolk and bake in a preheated oven (170 °C) until golden brown.
