Fluffy Cheese Omelette

Omelette stuffed with grated cheese and mascarpone with chives, sprinkled with parmesan cheese.
Ingredients:
Procedure:
1. Whisk mascarpone with finely chopped chives
2. Place the egg yolks and cream in a bowl, season with salt and pepper and lightly fold in the stiff egg white mixture
3. Pour the egg mixture into the melted butter, bake slowly for 5 minutes, then sprinkle with finely grated parmesan and cheddar cheese, carefully place the mascarpone and chives on top of the cheeses, fold the omelette over to wrap the inside and bake for another one to two minutes

You can also put a slice of ham or toasted bacon in the omelette.
