Fine bear garlic soup

pcs per handful of fresh bear garlic leaves pcs celery pcs potatoes pcs salt, black pepper pcs oat, soy or whipped cream

Simmer and fry the sliced potatoes and celery (2:1) in butter until golden brown, if you don’t like celery, you can omit it and finish the potato instead. Pour in water, add salt and cook until tender.

Add the chopped bear garlic to the broth, stir to soften and blend to a puree. It can be eaten as it is, diluted with the potato broth, but to soften the flavours we can add cream. Finally, season with ground black pepper from the grinder.

The soup has a wonderful aroma and taste. To vary the taste with bear garlic, we can add carrots, young nettles, cauliflower…
