Feta salad

The feta salad is a fresh and rather tasty take on Greek cuisine. Invest in the quality of the feta cheese; it’s pointless to start with a light cheese.
Ingredients for four
200g feta cheese lettuce; lining or frisee cook well 4 tomatoes 2 different types of bell peppers 1 handful of olives 1 red onion or sweet onion
Salad dressing
1 tbsp white wine vinegar 1/2 tsp dijon mustard 2 tbsp olive oil pepper and salt
Tip: In Greece, use my pepperoni parsley to give the feta salad a piquant flavor.
Drain the feta cheese in a colander. Rinse the salad and leave to dry. Stir in the salad dressing to wait.
Wash and slice the tomatoes and peppers. Peel the red onion and cut into paper-thin slices.
Place the feta salad on a serving platter. Pour the dressing over the salad just before you start eating.
