Cod is one of the unmistakable protagonists of Easter. It is fried, stewed, marinated or baked. We can get it in fillets or in crumbs, salted or desalted. We show you how to prepare one of the traditional Easter recipes, a rice with cod.
How to make rice with cod
Ingredients
. Desalted cod crumbs, 250 g SOS Round Rice, 200 g Fumet, 450 ml (or bottled fish stock) Garlic cloves, 3 Fresh onion, 1 Red bell pepper, 1 Ground saffron, 100 mg (or in strands) Sweet or smoked paprika, 1 tsp.
Step 1
Add a drizzle of oil over a pan. Fire at medium power. When it gets hot, pour all the ingredients in batches and stir each time.
First, the chopped fresh onion, then the 3 chopped garlic cloves, then the chopped red bell pepper and finally, the 250 g of desalted cod crumbs.
Sprinkle a tablespoon of sweet or smoked paprika, a pinch of salt and 100 mg of ground saffron, although it is perfectly fine in threads.
The last step is to add the 200 g of round SOS rice. Stir everything together. The rice should be dyed in color. We pass to the broth.
Step 2
Fill the pan with 450 ml of fumet. We have prepared it at home with bones, fish head and hake. If you are in a hurry, you can buy fish stock already prepared.
After pouring the fumet, stir once to distribute the rice throughout the paella pan. We do not touch it anymore.
According to your kitchen, now it is very easy: 3 minutes on high until everything comes to a boil and about 14 minutes on medium-low to absorb the broth. That’s 17 minutes in total, plus 5 minutes of rest.
Step 3
Remove from the heat. With a cloth or newspaper, cover the paella pan for 5 minutes. The steam will finish cooking the top of the rice.
Step 4
Skimmer in hand and serve garnishes. As always, lemon juice is optional, as is aioli.

Fish and rice, what can go wrong? Rice with cod is a recipe that surprises by the humility of its ingredients. In addition, it is very easy to prepare.
Don’t hesitate to give it a try at Easter and invite your family and loved ones. Shared rice is a thousand times better.
For this rice, we have prepared the fumet ourselves. At home, we are textbook: every Sunday I prepare a rice dish. I can confess that the fumet changes everything.
I had never prepared concentrated broth because I thought it was tedious, demanding or directly unnecessary. False. You only have to ask for the pieces at the fishmonger’s: give me a bag to prepare a fumet. They will give you leftovers, bones, some cut head…
The taste is exquisite, like a restaurant paella. You can also add leek, carrot or onion. This simmered fumet, with a little saffron, salt and paprika, enhances the flavor of the rice by 500%.
Rice with cod will come out automatically with a broth like this. You will receive libations. I insist: this extra step is worth it.
Aside from this novelty for us, rice with cod seems to us to be one of the simplest rice dishes to prepare. Following these steps and knowing well the behavior of your stove or the gas of your burners, you will nail it every time.
The few tips we can give you is to never overdo it with the bottom of the paella. That is, unless you cook for more than two people and use a paella pan with a larger diameter, do not overload it with weight.
If you add too much onion, bell pepper or cod, the result is very crude. The broth is not enough for the rice to drink. Much is lost with Vegetable Recipes and Vegetable Recipes and impoverishes the result.
As for the cooking of rice, it is always the same story: read well the manufacturer’s instructions according to the type of rice. Some suggest a total cooking time of 16 minutes, others 18… Attention to these details and a lot of love. The rest is pure chemistry.
