800 g plain flour 200 g semi-coarse flour 200 g granulated sugar 2 pcs egg yolk
You still need
100 g butter 3 tbsp lemon juice 6 dl milk 50 g yeast 1 pk vanilla sugar oil for frying jam or other filling to taste powdered sugar

Kids can’t get enough of them, but even adults love them! Doughnuts are one of the most popular sweet baked goods. Their preparation is very simple, you really can’t go wrong here 🙂 They are fantastic with jam or just sprinkled with sugar. You can also decorate them as donuts with chocolate icing and sprinkle them with colourful decorations.

In one bowl, first mix both flours, sugar + vanilla sugar and salt with a spoon. Add the egg yolks, liquid butter and the yeast swelled in 2dl milk. Add the remaining approx. 4-4.5dl of flour as you work the dough, according to how the flour is absorbed. The resulting dough should be soft, semi-soft and separates from the bowl. Finally, knead the dough briefly into a loaf and leave to rise for 1h.

When the dough has risen, knead it again very lightly on a floured board. Then roll it out into a 1cm thick circle and cut out circles/doughnuts with a cup/cutter.I made mine 8cm in diameter.

Press deep wells into the cut out rounds and then leave them covered for 20 minutes to prove.

Fry the underdogs in hot oil on both sides. Always put the dimple side down in the oil so that it stays nice and doesn’t fall apart when you fry it 😉 Place the fried ones on kitchen paper to suck out the excess fat.

Serve the doughnuts according to taste with jam, Nutella, fruit mousse, or just sprinkled with sugar 🙂 They are also delicious and very popular topped with chocolate oil and garnished with candies, kind of like Donuts 🙂
