Fantastic baked potatoes with tomato sauce

1 kg potatoes 1 pk zucchini 1/4 pk leek 1/2 pk onion 1 clove garlic 2 pk tomatoes 1/2 can peeled tomatoes 2 basil (fresh or dried) salt, ground black pepper butter chives

These fries are one heck of a treat. A tasty meatless dish that you can also serve as a side dish. But this way it doesn’t lack anything 🙂

Prepare the ingredients.

Cut the skin off the fresh tomatoes and cover with boiling water to get rid of the skin. Let cool.

Clean the zucchini and zucchini and cut into thin slices.

Cut the leek, onion and garlic finely and fry in butter.

Slice the fresh, skinless tomatoes into smaller pieces and add half a tin of peeled tomatoes. You can also whole, there will be more sauce. Next, add salt, ground black pepper and basil.

Smash everything well with a fork to get rid of the larger pieces.

Add the tomatoes prepared in this way to the pan with the onions and leeks. Simmer for 5 minutes and add 1dcl of water, no more is needed as the courgette will still let the water out. Set aside.

Grease a colander with butter and alternate between potato and courgette rounds. Season each layer with salt.

Continue this until all the potatoes and zucchini are gone.
10.
Finally, pour the tomato sauce all over the potatoes.

Shake gently to allow the sauce to slide under the potatoes a little. Place in a preheated oven at 170 degrees for approximately 1 hour.
12.
Sprinkle the chives over the cooked potatoes.

Serve. Enjoy.
