If there’s proof anywhere to the claim that Italian cuisine is the cuisine of the poor, it’s this recipe. It’s brilliantly simple, packed with flavour and it’s only made possible by a combination of four ingredients.

Put the spaghetti in salted boiling water to cook, roughly for 7 minutes. In this time, they will be just short of al dente.

In the meantime, in a dry and hot frying pan, gently toast the spices, for about 30 seconds. Then rub it in a mortar and return it to the pan. Pour in one ladle of pasta water, this adds another layer of flavour and, most importantly, saltiness. Let reduce by half, stirring occasionally over a high flame, this will take a minute or two.

Grate the pecorino and mix thoroughly with half a ladleful of pasta water in a separate bowl.

Add the spaghetti to the pan with another ladleful of pasta water. Cook over a high heat, stirring constantly, for 2 minutes. After this time, when the pasta is al dente, add the cheese sauce and turn off the stove. Allow to finish cooking over residual heat, stirring constantly.
