450 g plain flour 50 g sugar 100 g butter 260 ml milk 100 g raisins 1/2 packet baking powder pinch of salt 1 egg yolk whiskey

Scones are one of the traditional English pastries served during tea at five. They are served with jam and whipped cream with a fat content of over 40 per cent. This is milder in flavour than butter and makes a delicious combination.

Cover the raisins with whiskey and let them stand like this for at least an hour to give them a better flavour. Preheat your oven to 200 degrees.

In a bowl, mix all the dry ingredients.

Now add the room temperature butter cut into small pieces. Start working it into a soft dough. Then gradually add milk to it to make it smooth.

When the dough is kneaded, gently incorporate the raisins without alcohol. Then roll the dough out to a height of approximately 3 centimetres.

Take a cup or mould and cut out rounds. Mix the leftovers, roll out and cut out more pieces. Finally, brush them with beaten egg yolk and bake them.

Let the hot scones cool for a while and serve them still warm with butter or, if you can get hold of the aforementioned cream, your favourite jam.
