English fried fish: Fish & Chips in beer batter

The day before I plan to make the fish, I peel the potatoes and cut them into thick oblong pieces. I cover them with water and leave them to simmer. I change the water once. The potatoes must be stripped of the starch so that they are wonderfully crisp on the outside and soft on the bottom. Frozen fillets, I let loose, I rinse the potatoes well, dry them and put them in a frying pan with hot oil. If they should overlap, don’t, you’d better roast them in batches.

Bake them on each side until crispy and transfer them to a piece of paper.

Knead the ingredients for the dough into a smooth paste. The dough should be on the opposite side of the spoon, if it is thin, so add a little flour, if it is thin add a little beer. Let the dough rest for at least 15 minutes. If you have reservations to crack the pastry, so the egg divide into the yolk and white and from the egg white to make a stiff snow and incorporate it into the dough.

Soak the fish in the batter and fry it on each side in oil until golden. If you have batter left over, make it into normal smazenie…they are very edible

Place the peanuts and fish on a plate and serve with lime or lemon marigolds. The fish will enjoy the citrusy state, as if it were asking for it.
