Enchirito recipe with ground beef

This is an enchilada made from a soft flour tortilla filled with a beef and bean mixture. “Enchirito” is a cross between an enchilada and a burrito.
What you’ll need
1 pound ground round 2 tablespoons finely chopped onion 1/4 teaspoon salt 1 teaspoon chili powder 1 can (16 oz.) frozen beans 1 teaspoon dried chopped onion 1 can (10 oz.) enchilada sauce 2 1/2 cups shredded cheddar cheese 1 can sliced black olives (4 oz.) 1 package flour tortilla, 10-inch size
How to make it
Brown ground beef in a pan with chopped onion, shaking beef into small pieces until beef is no longer pink. Add salt and chilli powder.
Add the refried beans until smooth. Heat beans in microwave or in a small sauce pan.
Assemble warm tortillas in a covered container or wrap in a damp towel in the microwave. A HIGH setting takes 30 to 40 seconds. Or warm the tortilla on a gently oiled pan for about 1 or 2 minutes per side.
Scoop 3 teaspoons of the beef mixture into the center of each tortilla. Sprinkle about 1/2 teaspoon dried chopped onion over each. Top with 1/3 cup warm refried beans. Sprinkle the sides of each tortilla over the beans and meet the edges. Transfer tortilla to ovenproof or microwave-safe plate.
Spoon 3 teaspoons enchilada sauce over top of tortilla. Sprinkle with 1/4 cup shredded cheese, heat in microwave or broiler until cheese is melted, then top with 3 olive slices.
