Eggplant with smoked meat and rice

Baked eggplant with chopped smoked meat, rice, garlic, leek, capers, celery and two kinds of cheese.
Ingredients:
Procedure:
1. Wash the aubergine, cut in half and hollow out the inside to make a boat with a wall about 1 cm thick
2. Chop the inside of the aubergine and add salt to the aubergine spears
3. Let both sweat for half an hour, then wash (rinse the chopped mixture with water in a colander and let it drip, then add it to the filling)
4. Fill the eggplant boats with the mixture directly in the baking dish
5. Drizzle lightly with olive oil and pour in a deciliter of water
6. Bake under foil for about 50 minutes, then remove the foil and bake for a few more minutes until the surface is slightly red.
Aubergine mixture:
1. In a bowl, mix with egg, chopped sweated eggplant, rice, garlic, salt, pepper and both cheeses.
Recommendation:
Serve alone or with vegetable salad.
