Omelette of whisked eggs, shrub tomatoes, basil, healthy chia seeds, topped with parmesan cheese. A tip for a light, quick and meatless dinner.

Procedure:
1. Heat oil in a pan
2. Beat the eggs in a saucepan, add salt and pepper and whisk thoroughly
3. Pour the oil on the hot pan and turn down the heat
4. Cover with sliced tomatoes and let the eggs set
