30 g butter 25 dkg plain flour 2,5 dl water 50 g butter 1/2 KL lemon juice to taste vinegar, white pepper, salt

Melt 30 g butter, set aside, add flour, warm water, add pepper and salt. Stir with a whisk and heat. When it starts to boil, turn off the heat and add as much butter as you like. The more butter, the softer it is. Finally, add the lemon juice and a splash of vinegar, but don’t cook anymore.
