Eastern Viennese bread scrambled eggs

This unusual scrambled eggs was made by a friend from the East who was visiting us. I was skeptical at first, but it was really very tasty. I recommend making it especially if you have an older loaf of bread and don’t know what to do with it. 1. Melt the butter and stir in the eggs. 2. Stir over very gentle heat until the eggs start to lump. When they reach a semi-cooked consistency, set the pan aside. 3. In a bowl, cut the bread into small cubes and pour over the “semi-fried bread”. 4. Stir and let stand for about 2-4 minutes while the bread soaks up the eggs. Season with salt and pepper to taste and sprinkle with chives or parsley at the end. 5. Enjoy!
