A quick and luxurious dinner.

Dry the duck breasts, season with salt and pepper and sear in a frying pan over a medium heat, skin side down first for about 6 minutes, turn and sear on the other side for about 5 minutes. Remove with tongs to a plate, cover and let rest.

When there is plenty of fat in the pan, pour it off, leaving just a little in the pan, dust with Solamyl or flour, add brandy and orange juice, a little water and let boil, finally soften with butter. Instead of oranges we can put orange juice.

Cut the breasts into thin slices and pour the sauce over them.
