Duchesse potatoes

When you need a festive mashed potato, Duchesse potatoes are the perfect choice. It’s easy to succeed when you follow the recipe carefully.
Ingredients for the pellet
1 kg of floury potatoes, e.g. 2 egg yolks 1 tbsp butter 1 pinch of white pepper 1 tsp sugar 2 tsp salt piping bag and nozzle
Tea Duchesse potatoes in:
Boil the potatoes in their skins until cooked. Pour off the water and place under the lid in a jar.
Peel the potatoes, mash them with a fork and mix in the butter and spices.
Separate the yolks and blend them into the mashed potato mixture with a blender. Make sure the mixture is as smooth as possible.
Prepare a piping bag and scoop the mashed potatoes into it. Line a baking tray with baking paper and roll out the potato mass into small discs with enough weight to allow them to swell slightly in the oven.
Bake the Duchesse potatoes in a 215C oven for 10-15 minutes, until the surface is nicely browned.
Tip:The Duchesse mashed potatoes can be made ready in the freezer and taken out of the freezer when needed.
