Don Peppe’s Chicken Scarpariello Recipe
Ingredients:
1 (3-4 lb) chicken, cut into 8 pieces
1/2 cup all-purpose flour
2 tsp kosher salt
1/2 tsp black pepper
1/4 cup olive oil
1/2 cup white wine
1/2 cup chicken broth
1/4 cup pineapple juice
3 cloves garlic, minced
1/2 tsp dried oregano
1/2 tsp crushed red pepper flakes
1/4 cup chopped parsley
1/2 cup diced pancetta
1/2 onion, diced
1 green pepper, diced
1/4 cup raisins
1/4 cup slivered almonds, toasted
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large zip-lock bag, combine flour, salt, and pepper. Add chicken pieces, a few at a time, and shake to coat.
3. In a large skillet or Dutch oven over medium-high heat, heat olive oil. Add chicken and cook until browned on all sides.
4. Add wine, chicken broth, pineapple juice, garlic, oregano, red pepper flakes, and parsley. Stir to combine.
5. Add pancetta, onion, green pepper, raisins, and almonds. Stir to combine.
6. Transfer to the oven and bake for 30-35 minutes, or until the chicken is cooked through
