Devil’s Mousse

Brewed water with sugar, semolina and lemon juice, whipped to a froth.
Ingredients:
Procedure:
1. Add the sugar and semolina to half a litre of water and stir in the juice of 1 lemon
2. Season with a little grated lemon peel and cook on low heat for 15 minutes
3. Stir continuously until cool, then whip the cooled mixture to a stiff froth (preferably with a hand-held immersion blender)
4. Finally, flavor half of the portions of the mousse with raspberry (or other aromatic) preserves
5. Serve according to taste, either with portions of lemon-flavored white mousse or pink, raspberry-flavored mousse.
