2 butter 1 pk spike beef bone 1000 g beef tail (chopped into smaller pieces) 800 g beef high roast 4 liters water 4 pk bay leaf 6 pk black peppercorns 4 pk juniper 4 pk allspice 2 tbsp salt 1 pk onion 1/2 pk celery 1 pk spring onion 2 pk parsley 1/2 pk kohlrabi 4 pk carrot

If you can get your hands on some oxtail, definitely give it a try. It’s a delicacy that’s enjoying a renaissance.

In your largest pot, heat up some butter and sear all sides of the beef and bones.

Then cover with water and bring to a boil.

Collect the protein clots.

Add seasonings – bay leaf, whole peppercorns, black pepper, juniper and salt.

Bring to the boil again.

Put the boil on the lowest setting and cook just below the boiling point, so called pulling, for at least 5 hours.
