Currant pancakes from poppy seed dough

Did you know that Czechoslovakia was one of the biggest exporters of currants up until the Second World War? The poppy is a traditional Slovak crop.
Nowadays, its cultivation is not so widespread, but the poppy has remained a popular part of our menu. This is proven by the wonderful Poppy Book full of amazing poppy recipes. 12 – 15 pieces. Prepare your pancake pan.

Classics like pancakes once in a while for breakfast are a must. To make it not so routine boring, try them with poppy seeds. Put some milk, eggs, caster sugar, salt, baking powder, plain and poppy seed flour in a bowl. If you opt for white poppy, the pancakes will have a slightly nutty taste. Use a fork or whisk to mix a smooth batter. Let stand for a few minutes and add the remaining milk as needed so that the batter is not too thin, but not too thick either.

Heat a little oil in a frying pan, just use a feather to spread it. Use a ladle to spread the batter evenly and cook thin pancakes on both sides.

Mix the cottage cheese with the honey and season with currant juice. Progressively spread the finished pancakes with the cottage cheese filling, sprinkle with currants and roll up. If you want to make them even better, drizzle them with melted chocolate.
