500 g zucchini 2 pcs egg 100 g corn breadcrumbs 100 g spelt plain flour salt

1. Peel the zucchini and remove the kernels. Cut the rest into thin slices. Salt and let rest on a napkin for 5 minutes (to soak up the moisture). 2. Then roll each slice in flour, eggs and then corn crumbs. 3. Place the zucchini slices side by side on a baking sheet lined with parchment paper. 4. Bake in a preheated oven at 200 degrees for 25 minutes (until the surface is golden and crispy). 5. Serve with potatoes or on their own with tartar sauce. Enjoy!
