Crispy thin börek /Sigara Börek,

We need
350 g filo pastry (yufka) 150 g Cow’s cheese in brine 150 g g grated cheese 1 bunch onion parsley to taste salt
For rubbing
1/2 dl milk 1/2 dl water
For spreading

The easiest börek you can have ready in minutes! It gets its name from its shape, which resembles a Cigar A fantastically tasty, spreadable, thin börek whose fillings can be varied to taste 1.
For this börek we will use Yufka, or your choice of Filo dough. I used Yufka cut into triangles, which is meant for Sigara börek If you can only buy round dough, just cut it into triangles

For the filling, mix grated cheese, crumbled Turkish cheese and chopped scallions. If the cheese is not salty enough, you need to add a little salt as well. Prepare the milk and water to coat the dough before twisting. The dough will moisten a little and it will be nice to twist

Use a pastry brush to brush the dough/triangles with milk, put the filling , fold the 2 sides inwards and twist thinly like a cigar For a better idea, watch my video

Smash the burger in enough oil until golden. Once cooked, lay out on kitchen paper to drain off excess fat
