Crispy sweet potato fries: baked and fried

If you’ve baked or fried sweet potato fries, you know that they have the unpleasant property of remaining soft without a crispy surface. Here’s the perfect way (actually, two) to make them into a really crunchy treat.

In either case, start by cleaning and slicing the potatoes.

You can and don’t need to peel the potatoes, the important thing is to cut them into roughly evenly sized chunks (about 1×1 cm).

Baked fries: pour ice water over the cut potatoes, add salt and let stand for about an hour.

Then drain them, dry them well in a towel and in a bowl mix them first with starch and then with oil.

Place the individual fries on a large baking tray lined with baking paper so that they do not touch each other.

Baking: place the baking tray in an oven preheated to 220°C and bake for the first 15 minutes, then reduce the temperature to 200°C, turn the individual fries over and return the tray to the oven for a further 20 minutes.

Salt the crispy sweet potato fries and serve immediately.

Fried fries: Place the sliced potatoes in a saucepan, cover with water, add salt and vinegar and bring to the boil. Cook over medium heat for about 8 minutes.

Then drain them, let them drain and cool and lightly dry them.

In a large bowl, mix together the starch and water and carefully coat the potatoes in the resulting mixture.

Fry them in hot oil until golden brown and mostly crispy – about 10 minutes.

Salt the crispy sweet potato fries and serve immediately.
TIP: the key is to serve the finished potatoes immediately! Both baked and fried! Because, like classic potato chips, they will soften and lose their crispness in a short time.
