Rimi is once again organising the Recipe Masterclass competition, in which primary school pupils are invited to take part as a team with their class. Each month, teams will be given a new recipe problem to solve. The aim is to get young people interested in cooking, and to encourage them to eat a more varied diet. Out of fear of growing up and out of solidarity with young people who love to cook, we decided to take part in the competition and contribute to the recipe challenges given to the young people. Estonians are seafaring people and it is a well-known fact that we like fish – so much so that for decades a whole day of the week has been dedicated to showing it off, and probably to keep the Thursday menu as interesting as possible, the March challenge was to create a recipe from fish or seafood. Our solution to the challenge was to make some crispy fish sticks from salmon fillet, namely I put the breaded pieces of salmon fillet in the oven with potatoes and carrots, and cut them into delicious fish sticks when cooked.Preparation instructions
Crispy fish sticks with salmon fillet
Salmon is packed with all sorts of health benefits – it’s a great source of B vitamins and protein, and as a proper fish should be, it’s packed with Omega-3 fatty acids, which our bodies can’t produce on their own.
First of all I seasoned the salmon fillet, then I mixed up the breading and gave the salmon pieces a good scrubbing, and put them in the oven with the potatoes and carrots to bake for about 30 minutes, so that the food would cook and the fish would have a nice crispy crust. Before the food had time to cool, I sprinkled some breadcrumbs on the fish and potatoes and our fish delicacy was ready to be served.
