Crispy Chicken Thigh Fries

Clean and cut the potatoes into thicker chunks and soak them in cold water. Prepare a frying pan and heat the oil. Place the fries in the pan on the hot oil and fry the fries for about 10 – 15 minutes. The fries will be golden and crispy on the surface.

Wash the lemon thoroughly and squeeze out the juice. Grate the lemon zest.

Salt and pepper the washed chicken thighs.

Mix 1 tbsp oil with 3 tbsp lemon juice and a little rosemary. Pour this over the chicken thighs and leave to rest for 30 minutes.

Remove the meat from the brine and let it drain. Heat the rest of the oil in a frying pan and fry the thighs on both sides. Peel and thinly slice the garlic and add it to the meat. Sprinkle the rest of the rosemary on top of the chicken thighs and place in the oven to bake at 200°C for about 30 minutes.

Garnish the cooked chicken thigh with a little rosemary and a slice of lemon.
