Crisp linzer pastry

500 g plain flour 200 g powdered sugar 250 g butter 2 pcs egg yolks 2 tbsp thick yoghurt 2 KL baking powder pinch of salt cherry jam (or other sour to taste)

Fantastic, crispy linzer cookies for the holiday table, as a treat for a visitor π Or just to sweeten the weekday with coffee π

In one bowl, first mix flour, sugar, PDP and a pinch of salt with a spoon. Then add the completely softened butter, egg yolks and yoghurt. Make a semi-soft, soft dough, which you shape into a loaf and leave to rest, covered, for 30 minutes.

After the time has elapsed, roll out the dough on a floured board to a thickness of 3mm.

Then cut out circles from the dough, I made bigger ones, they were 7,5cm in diameter π I cut out so that I had less scraps left and therefore some were not nice and round, but I donβt mind at all π You need to cut out as many circles as you have to pair. Then cut out the centre half of the whole lot. I also made mine so much bigger, I used a cough syrup measuring cup π

Place the rolls on a baking sheet with parchment paper and bake in a preheated oven at 190Β°C for about 11-12minutes. It is necessary to keep track of it. The cookies should only be pink, faintly pale brown π

Finally, stick the cooled scones together with any thicker jam. I used cherry jam, sour jam fits better π Donβt skimp on the jam at all, make sure thereβs plenty of it. I left the little rings from the centers so clean because they taste great on their own like that. Put the glued cookies in a box and let them set until the next day. This is so that the jam settles and the cookies soften up nicely too π

On the second day, prepare the chocolate icing with which to decorate the cookies. I ran the milk chocolate with 1kl of heavy cream. But feel free to make the frosting to suit you π

Next thing to do is to decorate the top of the cupcakes with chocolate. I also left a few pieces without chocolate and just sprinkled powdered sugar on top

The cookies are beautifully soft and crispy the next day. They taste really fantastic, even uncoated, just plain π They taste great, like biscuits. I really recommend to try them. I personally donβt even make any other linzer cookies anymore, these are my TOP π Iβve tried a lot of them, but none of them come close to these π

They are suitable for treating a visitor, whether for the Holidays or for a party π

From this batch I got 20pcs of glued together cookies with a diameter of 7,5cm. I hope that you will not be disappointed π
